Being heated by electricity makes the uncapping task very comfortable and quick, but care must be taken because intense heating, even for a very short time, causes "local cooking" in the area of contact with the leaf honey.
With this knife you can achieve good precision in cutting. This is vitally important to avoid removing more than the thin layer of operculum.
This knife has a temperature control, which is very important since excessive temperatures can caramelize the honey residue left on it and, due to this oversight, increase the concentration of hydroxymethylfurfural. Be careful with the temperature of the knife.
